I'd recommend the following (click on name of addon for link):

Speedy Actions -The default setting for WoW's hotkeys activates abilities on key release, not key press. This causes a very slight delay in every button you press. This mod will negate this affect, and make your game feel generally more responsive. After trying this out, I consider it absolutely required. It's lightweight, requires no configuration, and greatly improves your performance. Now my abilities are activated on key press, which means my dps rotation is faster, my tank rotation is faster, my heals are started earlier, and I am better looking because of it.

Skada - Takes the best of damage meters and omen and combines it into one Addon. Cleaner than Recount.

BindPad - A great macro / bind key addon that helps you organize all your macros and hot keys. you can also set it to be invisible so you can have a clean UI with no action bars. useful for me for healing.

OPie - when combined with above, this addon really cleans up the UI by making almost anything bound to a hotkey activated menu. Professions, mage ports, food, potions, Raid icons, minimap tracking, quest items, everythign get its own ring and its own hot key for instant call up and is hidden from view when not in use.

I also have a lot of addons that I use that are class specific (I have like 20 alts), but the above addons I believe are universal.
